DENVER (KDVR) — A popular restaurant in Texas is set to open its first location outside of the Lone Star State in Denver.
Paperboy, an award-winning “daytime concept” restaurant based in Austin, will open its third location in the Mile High City early next year.
The new restaurant will be located at 3490 W. 32nd Avenue in Denver’s West Highland neighborhood, with 75 seats inside the 3,000 square foot space and 20 seats on the outdoor patio.
Paperboy is known for its casual daytime dining, including brunch that was voted as the best in Austin in two publications. The restaurant focuses on daytime dining with breakfast, lunch, coffee and cocktails. The restaurant said it plans to partner with local producers to locally source ingredients.
“The menu will showcase playful spins on nostalgic daytime favorites made with high-quality, locally sourced ingredients and house-made components,” a press release from the restaurant’s PR group states.
There will also be a full beverage menu with fresh-squeezed juice, local beers, specialty coffee and espresso drinks, and cocktails and mocktails featuring house-made syrups and seasonal ingredients.
Executive Chef Pat Jackson, who has worked in various positions in the industry since he was 15, has relocated to Denver to open the new restaurant
“Colorado has always felt like a second home — I’ve spent years snowboarding in Breckenridge and enjoying the outdoor recreation. Now, being able to share that lifestyle with my family while opening Paperboy’s location here in Denver is a dream come true,” Chef Jackson said in a press release. “I’m incredibly excited to put down roots in Denver, not just as a chef, but as an active member of this inspiring food and beverage community, collaborating with local chefs, supporting neighborhood events, and finding ways to give back to the purveyors that make this city so special.”
Founder Ryan Harms said the restaurant’s mission to create meaningful connections by making great food and taking care of people is embodied in the West Highland neighborhood’s tight-knit sense of community, making it the perfect location for their out-of-state expansion.
An exact opening date has not been set but the restaurant said it plans to open in early 2026.
